Fajitas have quickly become one of the most popular dishes in Southwestern/Tex-Mex cuisine. These little strips of steak served sizzling hot with grilled vegetables in a soft taco are a guaranteed crowd pleaser. Our local purveyor of southwestern spices, Candelaria’s, creates the perfect seasoning blend for delicious fajitas. Print the recipe then grab yourself a seasoning packet (or two) and be ready to wow your family and friends on your next Mexican Dinner Night!
1-1/2 to 2 lbs flank steak
Marinade:
1 packet Candelaria’s Durango Seasoning
3 tablespoons red wine vinegar
1 tablespoon lime juice
5 tablespoons vegetable oil
3 cloves garlic, roughly chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1 large onion peeled and cut into 1/2″ thick rounds (don’t separate into rings)
2 large bell peppers (one red, one green) seeded and cut into large strips
10″ flour tortillas
Whisk marinade ingredients together. Place meat in a zip lock bag and pour marinade into the bag, making sure to completely cover the steak. Marinate at least 30 minutes, preferably overnight. Remove the meat from the marinade.
Preheat grill until very hot (15 minutes). Grill steak about 5 to 7 minutes until well seared on one side, then flip and continue grilling until center of meat is slightly less done than you want it to be when served. Place meat on cutting board and cover with foil for 10 minutes.
Grill onions about 6 minutes and peppers about 10 minutes, until both are lightly charred. Remove vegetables from the grill and slice into long, thin strips.
Slice steak very thin on bias against the grain. Serve immediately with the grilled vegetables and warm tortillas. Offer salsa and guacamole on the side.
