2 cups Anasazi Beans
1 lb ground beef
1 15 oz can diced tomatoes
1-1/2 medium onion
3-1/2 tablespoons Durango Artisan Foods Chili Powder
1 Beer, optional
Salt & Pepper to taste
Place the beans in a crock pot with 1/2 of an onion cut into 3 large pieces, 1 bay leaf and 1 teaspoon salt. Cover beans with 2 to 3 inches of water and cook on high until boiling, then reduce temperature to low. Simmer until beans are tender (3 to 4 hours at altitude).
In a separate pot, brown the ground beef. Add a diced onion and cook until translucent. Add Durango Chili Powder. Cook until fragrant. Add optional beer at this time and the can of diced tomatoes. Remove the bay leaf and onion pieces from the beans. Add the beans with any remaining water to the chile. Simmer until desired consistency.
